Although I work from home, lunchtime can surprisingly still be rather stressful. Either I delve so deeply into a current project that I continue on right through lunch, skipping it entirely, or I suddenly see it is time to pick up the kids from school, only to find myself famished. With such a diverse schedule and a hustle hard attitude, I need something that is fast and convenient, while still being fresh and nutritious.

Southwest Chicken Salad

Cook time 15 minutes

Ingredients

  • 1 1/2 cup romaine lettuce (shredded)
  • 1 chicken thigh or breast (boneless, skinless, cooked and cut into chunks)
  • 1 ear of fresh corn (cut off the cob)
  • 1/2 cup black beans (drained and rinsed)
  • 1/4 cup tortilla strips
  • 2 tablespoons cilantro (fresh)

Directions

Salad
1. Slice romaine lettuce into shredded ribbons
2. Add in cooked chicken, fresh corn kernels, black beans, tortilla strips and cilantro
3. Toss with creamy salsa dressing
Dressing
4. Combine all ingredients and mix thoroughly
